Speedy Ramen

A quick, flavorful ramen that doesn’t compromise on depth of taste. With the addition of Beef Bone Broth powder and vegetable broth powder, this ramen is both nourishing and easy to prepare. For a vegan option, simply omit the bonito flakes, Beef Bone Broth, and egg.

Ingredients

For the Stock

  • 1.5 liters cold water
  • 2 tablespoons Beef Bone Broth Miso Ramen powder
  • 1 (8 cm) piece dried Kombu (available at Asian grocers)
  • 1 handful Bonito flakes (available at Asian grocers)
  • 1 handful dried shiitake mushrooms
  • 2 tablespoons Tamari
  • 2 cloves garlic, chopped
  • 2 tablespoons Mirin (optional)
  • Sesame oil, to taste (optional)

For the Toppings

  • Snow peas
  • Pea shoots
  • Cucumber, sliced
  • Carrot, sliced
  • Purple cabbage
  • 1 packet gluten-free noodles
  • 1 sheet Nori, cut into strips
  • 1 egg per 2 servings (optional)
  • Black sesame seeds (optional)

Instructions

  • Prepare Ichiban Dashi (Base Broth)

    • Heat water in a saucepan with the dried Kombu. Before it begins to simmer, remove the Kombu and set aside for other dishes, if desired.
    • Increase the heat, bring to a boil, and add bonito flakes. Boil briefly until the flakes sink. Skim off froth from the top.
    • Strain through a cloth-lined sieve, returning the stock to the pan, and discard the bonito flakes.
  • Make the Stock

    • Add dried shiitake mushrooms, Beef Bone Broth powder, Tamari, garlic, and (if available) Mirin and sesame oil. Simmer gently.
  •

    Prepare Toppings

    • Soft-boil the egg by cooking in boiling water for 5 minutes. Peel and cut in half.
    • Cook the noodles according to packet instructions.
  • Assemble the Ramen

    • Divide the broth into bowls, adding noodles, egg halves, and your chosen toppings.
  •  Serve: Enjoy hot, garnished with black sesame seeds, if desired.

For a vegan version: Omit the bonito flakes, Beef Bone Broth, egg, and use egg-free noodles.
