Chocolate Peppermint Slice
This chocolate peppermint slice has a crunchy base, a refreshing coconut-mint layer, and a rich chocolate topping—perfect for an indulgent treat!
Ingredients

Base Layer:
- 1 cup almond flour or crushed graham crackers
- 2 tbsp coconut oil, melted
- 2 tbsp maple syrup or honey
- 1/4 tsp salt

Peppermint Layer:
- 1 1/2 cups shredded coconut
- 1/2 cup coconut cream
- 1 tbsp coconut oil, melted
- 2 tbsp maple syrup or honey
- 1/2 tsp peppermint extract

Chocolate Topping:
- 200g dark chocolate (at least 70% cocoa), chopped
- 1 tbsp coconut oil

Prepare the Base Layer:
- Preheat the oven to 180°C (350°F) and line an 8x8-inch pan with parchment paper.
- In a bowl, mix the almond flour, melted coconut oil, maple syrup, and salt until well combined.
- Press the mixture into the bottom of the pan to form an even layer. Bake for 10-12 minutes or until golden brown. Let it cool.

Make the Peppermint Layer:
- In a food processor, blend the shredded coconut, coconut cream, melted coconut oil, maple syrup, and peppermint extract until smooth and creamy.
- Spread this mixture evenly over the cooled base layer and place in the fridge to set for about 20 minutes.

Add the Chocolate Topping:
- Melt the dark chocolate and coconut oil together in a heatproof bowl over a pot of simmering water, stirring until smooth.
- Pour the melted chocolate over the peppermint layer, spreading it evenly. Place back in the fridge for about 30 minutes to set.

- Once set, slice into squares or bars. Store in the fridge and enjoy chilled.
