Grain-Free, Gluten-Free Bread

This delicious grain-free bread is perfect for anyone looking for a gluten-free, lectin-free option that’s rich and satisfying.

 

 

Ingredients

  • 4 tablespoons ghee, softened
  • 1 tablespoon erythritol
  • 100g goat cream cheese or yogurt
  • 4 pastured eggs
  • 1 1/4 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

Prepare Wet Ingredients

  • In a mixing bowl, use an electric mixer to cream the softened ghee and erythritol until well-blended.
  • Add the goat cream cheese (or yogurt) and mix well.
  • Add the eggs one by one, mixing thoroughly after each addition.

Add Dry Ingredients

  • In a separate bowl, combine almond flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until smooth.

Bake

  • Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper, then pour in the batter. 6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
