Ingredients
- 800ml unsweetened fruit juice (mixed berry recommended for low sugar)
- 200ml water
- 2 tablespoons natural gelatin
- Your favorite mixed berries (cranberries are a great addition)
Recipe
- Prepare the Berries: Add mixed berries (including cranberries) to a pot and boil for 5–10 minutes to release their juices.
- Bloom the Gelatin: In a bowl with 200ml of room-temperature water, gently sprinkle the gelatin like light snowfall to avoid lumps. Let it sit (bloom) for 5 minutes.
- Melt the Gelatin: Place the bowl of bloomed gelatin over a saucepan of gently simmering water, ensuring the bowl doesn’t touch the water. Heat until the gelatin turns clear and liquid.
- Strain the Berries: Pour the boiled berries into a cloth strainer, letting them sit for 5 minutes to release the juice into a bowl.
- Combine and Set: Pour the fruit juice into a 1-litre glass container. Add the melted gelatin and whisk to combine. Cover and refrigerate for 4 hours or until set.
- Serve: Once set, serve your homemade jelly with coconut cream and enjoy!
Pro Tip: If boiling the fruits is too cumbersome, you can substitute with store-bought fruit juice.
